Creamy Spring Onion Dressing

Spring onions pop out of the ground all season and while they can be used to replace onions, garlic, leeks & scallions as needed we wanted to give them a recipe all their own. Yogurt, olive oil and lemon are the base of the creaminess while shredded onions are the highlighted flavor. Shallots would substitute nicely.

Ingredients

  • 2 teaspoons spring onion, grated
  • 2 teaspoons lemon juice
  • 2 teaspoons greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon fresh parsley, finely minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Serving Size: 2 People



 

Preparation Instructions

Peel the white bulb end of the onion and then grate it across a mircoplane or fine grater.

Whisk the onions with the lemon juice, greek yogurt, parsley, salt and pepper. Drizzle the olive oil in one drip at a time while whisking to combine.
