Creamy Lemon Broccoli Salad

The next time you have a few bunches of glorious broccoli, chop it up and make this salad with raisins, salty bacon or feta and almonds. This classic salad is tossed with a combination of yogurt and mayonnaise, or use one or the other if you prefer.

Ingredients

  • 4 cups broccoli, florets & stems
  • ¼ cup mayonnaise
  • ¼ cup greek yogurt, or mayo for dairy free
  • 1 teaspoon dijon mustard
  • 1 lemon, zest & juice
  • ¼ cup bacon, crumbled or feta cheese, optional
  • cup raisins, or other dried fruit, chopped
  • 2 tablespoons sweet onion , or green onion, finely minced
  • 4 radishes, or salad turnips, thinly sliced
  • ¼ cup sliced almonds, or other nuts crumbled

Serving Size: 2 People



 

Preparation Instructions

Bring a large pot of water to a boil. Prepare a bowl of ice water. Chop the broccoli, cutting into florets and including some pieces of the stems as well.

As soon as the water is boiling, add the broccoli. Blanch for 30-60 seconds until the broccoli is a vibrant green. Drain and transfer the broccoli to the ice water.

Whisk together the mayonnaise, yogurt, dijon mustard, lemon zest, and juice.

Fold the broccoli into the dressing and finish with the bacon/feta, raisins, sweet onion, and sliced almonds.
