Cherry Salsa

from Grilled Trout with Cherry Salsa and Grilled Potato Salad, the Week of July 1, 2012.
View the previous or next recipe for this meal.

Red staining, addictive salsa is perfect to pair with something spicy, pork, beef, chicken or drizzled on fish. Honestly, dipping chips in it is not a bad idea either.

Ingredients

  • ½ lb cherries
  • 2 tablespoons red onion, finely minced
  • 1 jalapeno, finely minced, more or less to taste
  • 2 tablespoons fresh herbs, such as mint, basil and/or cilantro
  • 1 lime, washed and dried
  • 1 pinch salt, to taste

Serving Size: 4 People

Preparation Instructions

Cut the cherries in half and remove the pits. Mince up into dice. Finely mince the red onion, jalapeƱo and herbs, toss into a bowl with the cherries. Zest the lime and juice it all over the salsa. Taste. Add salt as desired.

Serve immediately or store up to 3 days.
