Almond Cherry Clafoutis

This beautiful French dish is perfect for breakfast or even dessert. It is traditionally served with Black Cherries, but any stone fruit or berry will do. This is a gluten-free version using almond flour based off of Lizzy Marshall’s Apple Clafoutis that she made for Lilly’s Table previously. If you want it to be less sweet, skip sprinkling on the powdered sugar.

Ingredients

  • 2 cups cherries, halved and pits removed
  • 3 eggs
  • cup maple syrup
  • cup almond flour
  • 1 teaspoon almond extract
  • cup brown rice flour, or your preferred flour
  • ½ teaspoon salt
  • 1 tablespoon powdered sugar , optional

Serving Size: 4 People



 

Preparation Instructions

Preheat the oven to 375.

Cut the cherries in half and remove the pits. Sprinkle in a small to medium sized baking dish. Whisk together the eggs, maple syrup and almond extract. Fold in the flours and salt.

Drizzle and spread over the fruit.

Place in the oven for 35-45 minutes until lightly golden and a toothpick inserted in the center comes out clean.

Cool slightly at least 5 minutes and then sprinkle with powdered sugar through a wire mesh sieve, if desired.

Enjoy warm or cooled.
