Garbanzo Burgers with Mint Almond Cherry Salad

Combine the burger mixture, except the egg. Blend, taste and then add the egg. Start searing. Next, whip up the creamy mint dressing. Make a double batch if you would like to spread some on the burgers. Slice any other toppings for the burgers, wash & tear the lettuce and cut up the cherries. Toss the salad together and assemble the burgers.

Garbanzo Burgers

These vegetarian burgers blend up quickly in a food processor and are seared like pancakes making for a slightly more moist veggie burger. That being said, try skipping the buns just as Heidi Swanson created for a more flavorful, less starchy veggie-burger experience.

Mint. Almonds. Cherries. The flavors play together in a tug of war of delights. Blended almonds help thicken the dressing into a creamy, dairy free treat. Drizzle it across the lettuce with the crunchy almonds and sweet dark cherries.
