Grilled Zucchini Meatballs, Caprese & Baby Greens Pasta Salad

If you are using wooden skewers, soak them for the zucchini recipe. Roll up the meatballs and cut the zucchini. Bring water to a boil for the pasta. Heat the grill up and skewer the meatballs & zucchinis. Start grilling them. Cook the pasta. Then slice and skewer the Caprese Salad. Make the dressing and toss the pasta with the greens. Periodically rotate the zucchini skewers until lightly charred and cooked through.

Grilled Zucchini Meatballs

Meatballs are skewered with chunks of zucchini, onions, and whatever is skewerable & grillable. Seared up they get a bit of hamburger crust and flavor. A bit of the veggies are shredded in for extra flavor and moisture as we well.

Caprese Skewers

Only Italy, the birth place of the Slow Food Movement would have a flag representing their favorite combo- tomatoes, basil, mozzarella. Sliced and pressed on to skewers makes it surprisingly more exciting. Find tomatoes that are a similar size to your ball of mozzarella.

Baby Greens Pasta Salad

More greens than pasta are tossed with a simple vinaigrette. Mix and match your baby greens and fresh herbs as available. Traditional basil works well, but any other variety such as Thai basil or lemon basil can work nicely too. Add more veggies, nuts or cheeses to liven it up or just leave this as simple goodness.
