Prepare the zucchini bread. This chocolate & coconut packed treat is great to make ahead to enjoy throughout the week or freeze for a later date. The peaches can be prepared just prior to eating. The filling is almost savory and balances nicely with the cooked-to-sweetness peaches.

Zucchini Chocolate Chip Bread

With a bit of coconut & chocolate chips this is an excellent way to gobble up lots of zucchini. Make this ahead and enjoy it throughout the week. We call for it made in a casserole pan, but loaf pans can work as well. You can even place it in muffin cups, wrap up to freeze for another date. The coconut, chocolate chips and nuts are each optional. And these ingredients are the one place I would suggest playing around with the flavors by either omitting them or adding a touch more of one of them instead. Your favorite all-purpose gluten-free flour mix has the potential to make this easily GF.

Herb Stuffed Peaches

An almost savory, slightly sweet dish that pairs nicely as a main course with a salad or more veggies. Alternatively, try it for breakfast. Add a drizzle of honey or maple syrup and serve these for dessert too. What a versatile dish!? Goat cheese or ricotta cheese work well. And we like pistachios in it, but your favorite nut will work instead.
