Asian Vegan Sliders

Lightly seared or grilled veggies are stacked in between slider buns with a generous dollop of plum sauce. Make your own or buy a variety with just a few essential ingredients. Add any seasonal veggies that are easy to sear or saute.

Ingredients

  • 2 tablespoons vegetable oil (high heat)
  • 1 red onion, small, thinly sliced
  • 2 japanese eggplants
  • 1 summer squash
  • 4 shiitake mushrooms, about 3 inches wide
  • 4 slider buns, whole grain, if possible
  • ½ cup asian plum sauce
  • ¼ cup cilantro, whole leaves, washed and dried

Serving Size: 2 People



 

Preparation Instructions

Add a splash of oil to a pan over medium heat. Toss in the red onions and saute until just wilted.

Meanwhile, thinly slice the eggplant and summer squash, thinly on a diagonal.

Remove the cooked onions from the pan. Add another splash of oil. Sear the eggplant and summer squash, on each side until they are lightly golden. Sprinkle with a pinch of salt.

Sear the shittake mushrooms on each side and sprinkle with salt.

Toast the slider buns and warm up the plum sauce, if desired.

Assemble each little sandwich with a smear of sauce, the veggies layered with a few leaves of cilantro. Add another smear of sauce to the top bun and then sandwich them together.
