Ratatouille with French Lentils

Simmer the lentils. Slice the vegetables and prepare the Ratatouille. Place in the oven. Make the dressing for the lentils. Toss the lentils when they are ready. Serve together.

French Lentils

The lightly dressed French lentils are inspired by Julia Child, as they use shallots, dijon and fresh herbs to enhance their flavor. French lentils have a slightly better integrity than the red or even brown lentils which become soft quickly. Regardless, avoid overcooking your lentils to avoid mush.

Ratatouille

Remember that sweet Disney movie about the rat-chef?

This is our simplified version of the beautiful accordion style Ratatouille that he created at the end. A great way to use up end of the summer tomatoes, squash, eggplants and anything else you pull from the ground these days. Slice it all thinly. Stack and push together. Roast until their flavors melt and meld into each other. You will know it is done when a knife easily cuts through.
