Sonoma Chicken Salad

A creamy chicken salad stuffed with seasonal fresh grapes & nuts. Start with cooked or leftover chicken. Top on leafy greens or whole-grain bread for a scrumptious lunch on the go.

Ingredients

  • ¼ cup greek yogurt, or mayo for dairy-free
  • 2 tablespoons mayonnaise
  • 1 teaspoon honey, optional
  • 1 lb chicken, about 2 cups cooked & chunked
  • 1 cup grapes, red, seedless
  • 2 stalks celery, finely diced
  • ¼ cup pecan, crumbled

Serving Size: 4 People



 

Preparation Instructions

Whisk the yogurt, mayonnaise, and honey together. Season with salt and pepper if desired.

Wash & dry the grapes and cut in half or quarters so they are bite size pieces.

Fold the chicken, grapes, celery and nuts into the sauce.

Serve on a bed of lettuce greens or whole-grain sandwich bread.
