Apple Clafoutis

Oh la la. So good and very easy. I recommend making this at the beginning of the week, say on a Sunday evening. If you do, you’ll have on a hand a really delicious breakfast that’s great with coffee or tea, and has a good balance of protein and carbohydrates.

Ingredients

  • 2 apples, sliced in 1/4 inch pieces
  • ½ teaspoon cinnamon
  • 2 tablespoons butter, unsalted
  • ¼ cup water
  • cup maple syrup
  • 1 tablespoon vanilla
  • 3 eggs
  • 1 pinch salt, about 1/8 teaspoon
  • cup flour, whole grain or brown rice

Serving Size: 6 People



 

Preparation Instructions

Preheat the oven to 350.

Saute apples in with cinnamon in the butter until soft and lightly browned. Grease an enameled cast iron pan with butter.

Blend together the water, maple syrup, eggs, vanilla, flour and salt for one minute. Alternatively, use a wire whisk and beat until smooth.

Pour 1/4 inch batter into pan and heat until the batter sets. Remove from heat and arrange the apples in circles and pour the rest of the batter over the fruit. Place in the middle of the oven and bake for one hour.

Delicious warm or cold and stores well for three days.
