Ratatouille with a Purslane, Beet & Tomato Salad

This simple Ratatouille will bake for a while and as its flavors meld together, start the salad with roasted beets, the succulent garden weed better known as Purslane and fresh tomatoes.

If you are needing a bit of meat, grilled or roasted chicken will pair well. If you want to keep it simple instead add a loaf of French bread and your favorite cheese.

Remember that sweet Disney movie about the rat-chef?

This is our simplified version of the beautiful accordion style Ratatouille that he created at the end. A great way to use up end of the summer tomatoes, squash, eggplants and anything else you pull from the ground these days. Slice it all thinly. Stack and push together. Roast until their flavors melt and meld into each other. You will know it is done when a knife easily cuts through.

Purslane, Beet & Tomato Salad

A friend was traveling through and stopped at the Boulder Farmers Market before heading to our home. She brought several beautiful items to share, but the newest one to me was the Purslane. Upon further research we discovered it was one of the many weeds that we aggressively picked and it was now (mostly) gone from our yard. Her little bundle became the inspiration for bringing beets & tomatoes together. If you don’t have purslane substitute arugula or baby spinach for this salad. For the sake of colors, we used a golden beet and red tomato. If you have yellow tomatoes and red beets, that would be fun as well. To make this a main dish add nuts or crumble in your favorite cheese.

Okay. This is not exactly a recipe, but rather sometimes the best pairing for your meal is a crusty loaf of French bread. My family lineage is French, what can I say crusty bread seems more appropriate then not. So, here it is.

Let’s call it a reminder. In addition, here are a few tips on how to store it, keep it fresh, or use it up. Whenever possible try to find those crusty gorgeous whole-grain varieties.
