Squash Scramble Stuffed Pitas

A quick saute of onions & squash are finished with a scramble of eggs. Stuff it in a pita. Add even more veggies if desired. Wrap it up. Take it to go.

Ingredients

  • 1 teaspoon butter, unsalted
  • ½ onion, thinly sliced
  • 1 summer squash, small
  • 2 eggs
  • ¼ teaspoon salt
  • 1 pinch black pepper
  • 1 whole wheat pita, or whole grain tortillas

Serving Size: 2 People



 

Preparation Instructions

Melt half of the butter in a skillet over medium heat. Toss in the onions and saute until just wilted. Add the sliced squash and saute until wilted.

Beat the eggs and pour in. Sprinkle on the salt and pepper. Sear and fold the eggs until they are cooked through.

Cut the pita in half and open up. Stuff with the eggs. Wrap in foil to take on the go or gobble up as soon as possible.
