Chunky Chicken & Apple Salad

from Chicken & Apple Salad Sandwiches, the Week of October 20, 2013

Perfect for sandwiches or lying on a bed of fresh greens. Use leftover cooked chicken, chop, shred or tear it into bites. Toss it with apples and fresh veggies and as much of the creamy dressing as you like. Yogurt is used to lessen the mayonnaise, but you can skip the yogurt if you are dairy-free. The secret ingredient is ginger- fresh or powdered- but if you leave it out it will still be tasty.

Ingredients

  • 2 tablespoons plain yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon ginger, fresh or powdered, add more to your personal taste
  • ¼ teaspoon black pepper
  • 10 ounces chicken, a generous cup full
  • 1 apple, small or half a large
  • 1 stalk celery
  • 2 green onions, minced, optional
  • ¼ cup carrot, shredded
  • ¼ cup pecan, broken into pieces
  • 1 pinch salt, optional

Serving Size: 2 People



 

Preparation Instructions

Whisk together the yogurt, mayonnaise, mustard, ginger and black pepper.

Tear, shred or chop the leftover chicken into pieces. Chop up the apple, celery, and green onions. Fold it all, including the carrots and pecans, into the dressing.
Taste.

Add more of any of the ingredients to your personal taste. Season with salt if desired. Serve on bread or a bed of lettuce… or if you are feeling extravagant a croissant would be the perfect partner!
