Chile Relleno Scramble

All of the ingredients of a chili relleno are tossed into a scramble of eggs for an easy breakfast.

Ingredients

  • 2 hatch chilis, fresh or roasted
  • 2 eggs
  • 1 pinch salt
  • 2 ounces queso fresco

Serving Size: 2 People



 

Preparation Instructions

Chop the hatch chiles. Add butter to a skillet over medium heat. Saute the chiles. Whisk up the eggs with the salt.

Fold the cheese and eggs into the chiles. Cook while folding until the eggs are soft but cooked through.
