Roasted Pear & Beet Salad with a Kohlrabi Yogurt Bake

Peel and slice the kohlrabi and onions. Assemble the casserole and bake on one rack for about 45 minutes. Meanwhile, peel the beets & pears and roast them on the top rack. Whip up the dressing and prepare the other ingredients at the same time. As the Kohlrabi Bake finishes up, dress and toss the salad.

Roasted Pear & Beet Salad

Roasting pears in the same pan as the red beets will bleed the color into the edges of the fruit giving them an irresistible tie-dye look. Meanwhile your beets will be roasted into sweetness.

Kohlrabi Yogurt Gratin

The hearty, spaceship shaped vegetable practically melts together into a yogurt-egg bake. Add extra cheese if you desire, but mostly allow this dish to bake for as long as possible. At least 45 minutes, but if you have the time let it go longer.
