This Italian bread salad, uses up any leftover Christmas Panettone bread, but an eggy sweet bread such as challah is a great substitute. Brussels sprouts’ slight bitterness complements the sweetness of the other ingredients so perfectly. If you are in need of a bit extra salt, try adding small pieces of ham or bacon.

Panettone Panzanella

Italian Panettone bread is cubed, lightly toasted and tossed with roasted Brussels sprouts, onions, pears and bacon if you so choose. This lovely bread salad is a dramatically simplified version of this Panettone Panzanella recipe from Epicurious.
