Broccoli Strata

from Broccoli Strata, the Week of December 22, 2013

Eggs moisten and fluff up day old bread in this easy casserole that is packed with broccoli. Make this in advance, even the night before, and enjoy an easy, pop it in the oven meal for dinner or brunch.

For dairy free, simply substitute water for the milk. However, if you are a dairy-queen, do not hesitate to sprinkle on cheese as it will be tastiness. This could potentially be gluten-free by using your favorite g-free bread.

Ingredients

  • 1 teaspoon olive oil
  • 1 cup onion, roughly chopped
  • 4 cups broccoli, florets and pieces of stems, chopped
  • 3 cups whole wheat bread, cut in cubes, day old or dried out
  • 6 eggs, beaten
  • ¾ cup milk, or water for dairy-free option
  • ½ teaspoon salt

Preparation Instructions

Prepare in advance or preheat the oven to 375.

Add olive oil to a skillet over medium heat and toss in the onions. In about 5 minutes toss in the broccoli pieces. Add a splash of water and saute lightly until they are evenly bright green.

Fold the bread cubes together with the broccoli. Whisk the eggs with the milk/water and pour over the mess. Fold to combine.

Rub a casserole dish with a bit of olive oil or butter. Spread everything into the casserole. Cover with foil and place in the fridge until ready. If you are hungry as soon as you make it, pop it directly into the oven.

Bake for 25-35 minutes until it is cooked through in the center and no parts appear runny.
