Panettone French Toast

My Mother-in-law and I decided in the grocery aisle to make this for a Christmas breakfast. Suddenly a man joyfully came up and said that it is the most magical breakfast ever. He was so enthusiastic we practically invited him to join us. The trick to this simple dish is to keep the heat low, because the panettone is a bit sweeter than traditional bread that is used for French toast, therefore increasing the possibility of burning the outer part. Since it is sweet, be light with the toppings. I prefer yogurt whipped cream to balance it a bit with a light snowy sprinkle of powdered sugar or a tangy Sweet Orange Sauce.

Ingredients

  • ½ panettone
  • 5 eggs
  • ¼ cup milk
  • 2 tablespoons butter, unsalted
  • ¼ cup plain yogurt, optional
  • 2 tablespoons powdered sugar , optional

Serving Size: 4 People



 

Preparation Instructions

Slice the panettone into rounds. Whisk together the eggs & milk in a shallow bowl. Place one round in the eggs & milk. Using a toothpick, poke the bread as it soaks. Flip over the bread to soak on the other side.

Heat a skillet over medium heat. Once it is hot, reduce the heat to medium-low (about 4 on most stoves). Melt half of the butter in the skillet. Place the first soaked round in the skillet. Add another slice of bread to the eggs & milk. Sear the first slice of bread until it is golden. Flip over the French toast and sear on the other side.

Heat an oven to warm, about 170-200 degrees, as low as your oven goes. Place the cooked French toast in a baking dish. Repeat soaking and searing each piece of bread until they are complete. Place in the baking dish until everything is complete and ready to serve.

Sped up the process by using two skillets or a large griddle to sear more French toast at one time.

Top with a dollop of yogurt and/or a sprinkle of powdered sugar.
