Lentil Soup with Avocado, Pear & Spinach Salad

If you have time, soak the lentils in advance. Prepare the lentil soup. As it is simmering, wash and prepare the ingredients for the salad, including dressing. Arrange the salad and dress it, just prior to serving. I love having French bread on the side for dipping into the soup and wiping up the salad dressing, but it is entirely optional.

Lentil Soup

This is my pantry staple favorite recipe. Lentils are my little buddies, since they cook up faster than any other bean and offer more protein than most dried goods coming out of my pantry. Chard stalks work well instead of celery when the season has more chard available. But, this recipe includes both. Substitute with the produce you have available and you will not be disappointed.

Spinach Salad with Avocado, Pear & Almonds

Spinach is topped with creamy avocados, crunchy cauliflower, sweet pears, toasty almonds for a touch of protein, and drizzled with a lemon-garlic dressing. In the midst of winter this will awaken your taste buds, while giving you a nourishing burst of freshness.

Okay. This is not exactly a recipe, but rather sometimes the best pairing for your meal is a crusty loaf of French bread. My family lineage is French, what can I say crusty bread seems more appropriate then not. So, here it is.

Let’s call it a reminder. In addition, here are a few tips on how to store it, keep it fresh, or use it up. Whenever possible try to find those crusty gorgeous whole-grain varieties.
