Portobello Burgers with Avocado Tahini, Citrus & Beet Salad

Marinate the portobellos, at least 15 minutes ahead up to overnight. Whip up the Avocado Tahini Dressing. Cut the fruit and make the dressing for the salad. Grill the portobellos. Assemble the salad. Put the Portobello Burgers together, serve altogether.

Grilled Portobello Burgers

There is something about portobellos that feels as if they were made to be grilled. On a grill pan on your stove or in the fresh air outside the char marks and soft centers are worth it. Top with your favorite burger toppings… mayo, mustard, ketchup, lettuce, avocado, sprouts, etc.

Shredded beets, carrots, grapefruit and blood oranges create a colorful palate of crimson & amber splashed throughout the lettuce. If blood oranges are a challenge to find, simply use regular oranges.
