Irish Oatmeal

Steel-cut oats, whether they are the popular Irish import McCann’s or not, is the perfect way to start this bowl of goodness. Make these oats as creamy or sweet as you might like. We toss in dried cherries, but some teeny-tiny classic currants or any other dried fruit will do, too. If gluten-free, purchase oats that are specified to not process in gluten contaminated equipment.

Ingredients

  • ½ cup steel cut oats, such as mccann's, but any variety will do
  • 2 cups water, warmed
  • 1 cup milk
  • ¼ cup dried cherries
  • 1 pinch salt
  • 1 teaspoon brown sugar, more to taste
  • ¼ cup heavy cream , or creme fraiche, optional

Serving Size: 1 Person



 

Preparation Instructions

Start by soaking the oats overnight in half of the water, warmed.

The next day, drain the oats and place in a saucepan with the remaining water over high heat. As soon as it is simmering, reduce the heat to low and simmer slowly. When most of the water has been absorbed add the milk, dried fruit and simmer for another 8-15 minutes until it is your preferred consistency.

Serve the bowl of creamy, steamy oats, piping hot drizzled with a bit of the heavy cream and brown sugar, only if desired.
