Prepare the Pecan Butter ahead, if possible. Soak the oats overnight. Cook up the Irish Oatmeal and dollop on the Pecan Butter to taste.

Sweetened with dates and flavored up with pecans, this delightful butter is perfect on sweet potatoes, pancakes or spread across your favorite baked good.

Irish Oatmeal

Steel-cut oats, whether they are the popular Irish import McCann’s or not, is the perfect way to start this bowl of goodness. Make these oats as creamy or sweet as you might like. We toss in dried cherries, but some teeny-tiny classic currants or any other dried fruit will do, too. If gluten-free, purchase oats that are specified to not process in gluten contaminated equipment.
