Feta Stuffed Meatballs over Creamy Pasta & Balsamic Cauliflower

Start boiling water and prepare the vegetables. Saute the onions & cauliflower in separate pans. Put together the meatballs. After the meatballs are flipped once, toss the pasta in to boil. Finish with kale and goat cheese. Toss with the meatballs and serve. The balsamic onions & cauliflower can be served on the side.

Herb flecked ground beef, bison or turkey are wrapped around a small chunk of feta, making for a delightful little surprise in each bite. Flax meal serves as a quick & easy replacement of the typical bread crumbs and egg. If you do not have it handy ground oatmeal could work too.
