Roasted Strawberry Chicken Salad

While the strawberries roast, sear up the chicken. Cut the chicken into pieces and store in a to-go container. Wash and dry the salad greens and any other veggies you may want to add to your salad. Place in a salad bowl. Next, blend up the strawberry dressing and store in a third small container. Toss all three together for an easy lunch on the go.

Roasted Strawberry Salad

Strawberries are roasted until their sweetness intensifies. Blended up with a bit of olive oil and balsamic they become a heavenly dressing to toss on greens. This is simply greens and dressing, but feel free to add your favorite spring vegetables such as snap peas, asparagus or green peas. Even a crumble of cheese or dusting of nuts would compliment this simple salad well.

Just prior to searing the chicken it is dipped in a little flour. Use brown-rice, whole wheat or even white flour to give it a lovely, nearly crispy crust.
