Roasted Strawberry Salad with Roasted Spring Onions & White Beans

Prepare the onions first. As soon as they are in the oven, work on the strawberries and place them in the oven at the same temperature. When the strawberries are cooked, cool them in the fridge. Add the white beans to the spring onions and finish cooking. Blend the dressing and make the salad.

Spring onions, cipollini or even shallots can all work to add a beautiful rustic flare to white beans. Take this a step too far by soaking and cooking your own white beans from dry beans, it is worth it.

Roasted Strawberry Salad

Strawberries are roasted until their sweetness intensifies. Blended up with a bit of olive oil and balsamic they become a heavenly dressing to toss on greens. This is simply greens and dressing, but feel free to add your favorite spring vegetables such as snap peas, asparagus or green peas. Even a crumble of cheese or dusting of nuts would compliment this simple salad well.
