If making a split pea soup, add extra dry split peas & strain off enough cooked to make this spread— or simply cook them up on the own. While the split peas cook, make the crackers. While the crackers bake, make the salad dressing & slice the vegetables. Package everything separately for a lunch on the go or a simple picnic.

Almond-Herb Crackers

Fresh herbs peek out through the almonds in little bursts of flavor. Almond meal or almond flour will both work for these quick, protein dense little crackers. These are inspired by Elana’s Pantry’s gorgeous almond crackers.

Yogurt Herb Ranch Dressing

This easy dressing is an excellent substitute for chemical-dense ranch or buttermilk dressings or dips. Adding yogurt will increase the amount of good bacteria acidophilus in your dressing. Although, thick cultured buttermilk is a great substitute. If you want a thicker, ranch to dip, use greek yogurt or cultured sour cream instead. If using a fresh lemon, add the microplane grated lemon zest for a flavor boost. Use your favorite herbs that are available. If you are not a garlic lover, this is tasty enough without it.

Spring Root Salad

This is a tossed salad of greens & thinly sliced spring root vegetables. Left undressed and sealed well in the fridge this salad will last several days providing you with quick veggies whenever you need. Use a favorite dressing to top it or do it Italian style- drizzled with a beautiful extra virgin olive oil and an aged thick balsamic vinegar.
