Black Bean Tacos

To take these tacos on the go, toss the beans with the salsa and place in a microwave safe container or plan to enjoy cold, as I do. Wrap the corn tortillas and toppings separately. Combining toss which you do not mind being mixed. Take on the go. When it is time to assemble, place beans & cheese inside the tortilla and warm in 30 second intervals until hot. Filling with the remaining toppings and enjoy.

These vegetarian tacos are a great base and excellent option when serving all different types of food preferences. Take away the cheese for vegan or add a little grilled meat for those who want it.
