Spring & Salmon Sushi Handrolls with Avocado Wasabi

Mix and match the fillings of these handrolls according to what you can find at your market. Slice and prepare each of the fillings, lay them out and invite your diners to assemble their own. Whip up the avocado wasabi just before serving.

Smoked Salmon Sushi Handrolls

One of my favorite combinations of cream cheese & smoked salmon is folded into a sushi handroll becoming almost a small sushi burrito you can hold in one hand and take with you on the go. Substitute whatever green veggie you may have available, including baby spinach, snap peas or lettuce. Just plan to thinly slice them in strips. Skip the cream cheese if you would like these dairy free.

These seaweed wraps come together quickly once all of the ingredients are ready. You can even make it a sushi party by preparing your favorite seasonal veggies into strips in advance as well as any other additions you enjoy in your sushi rolls. Place everything at the table and let each person make their own.

Avocado-Wasabi Cream

Dollop this sauce along sushi, on a salad or as a dip. Adjust the wasabi as you like it, the avocado will make this creamy and luscious. If you are not a fan of spice, start with half of the wasabi and increase as desired.
