Lavender Yogurt with Strawberries

from Strawberry Granola & Lavender Yogurt, the Week of June 1, 2014.
View the next recipe for this meal.

Several years ago Rachel’s Organic, made a lavender yogurt I loved, except I found it a tad too sweet for my taste. This is my version by infusing honey with lavender and swirling it into thick, greek style plain yogurt. Thinner yogurt works too, but when it is thick the honey sauce works a bit better.

Ingredients

  • 1 cup water
  • ¼ cup honey
  • 2 tablespoons lavender
  • 1 cup greek yogurt
  • 1 cup strawberries

Serving Size: 2 People

Preparation Instructions

Bring the water, lavender, and honey up to a boil. Simmer for at least 15 minutes until the sauce is reduced in half. Strain off the lavender buds through a wire mesh strainer. Cool.

Wash the strawberries and spread on a dish towel to dry.

Whisk in the lavender honey about 1 tablespoon at a time until it is your desired flavor.

Serve with the strawberries alongside. Garnish with a pinch of fresh lavender buds.
