Rhubarb Beet Chicken with Strawberry Salad

Sear and steam the beets to start. Prepare the chicken and start to grill. When the beets are just tender, toss with the rhubarb and continue to cook. Meanwhile, prepare the dressing and salad ingredients. Remove the chicken from the grill and toss the salad. Serve the Rhubarb Beets on top of the chicken.

Rhubarb Beets

The tangy flavor of rhubarb is used to brighten up earthy beets. Basically any quantity of each veggie will do, but a 1:1 ratio is a nice balance of the flavors.

Use a grill pan for the lovely charred marks or follow this same method in a skillet. Either way the cook time is similar and flipping occurs when the chicken is easily loosened from the pan.

Balsamic Strawberry & Asparagus Salad

Balsamic drizzled on strawberries is a heavenly gourmet treat especially on top spinach, tossed with asparagus and creamy goat cheese. Sweeten the balsamic dressing as much as you like to your personal taste. Because the asparagus is left raw, select the thinnest you can find. If you can only find thick asparagus or prefer it cooked through, steam it until tender.
