Parmesan Walnut Portabellos with Cherry Wild Rice & Arugula Salad

Prepare the rice dish first. Once it is started, prepare the portabellos. Make the salad dressing and wash the greens. To serve, pile the Wild Cherry Rice on top of the open faced mushrooms with the Arugula Salad strewn across or alongside. The parmesan in the salad is entirely optional for this flavor-packed meal.

Cherry Wild Rice

Caramelized cauliflower & onions with a wild rice blend are drizzled with a tangy red wine vinaigrette, a generous handful of cherries, herbs and walnut bits. Make this a main dish salad, by adding extra walnuts, shredded chicken or chunks of your favorite cheese, such as feta, sharp white cheddar or even blue.

A slightly luxurious way to do up a portobello. Seared or grilled portobellos are stuffed with a sprinkle of parmesan and crumble of nuts.

Arugula Parmesan Salad

The bitter bite of arugula is paired with strips of parmesan and a drizzle of sweet vinegar. Use a thick, aged balsamic or sweeten up a thinner balsamic with a bit of honey, maple syrup or agave nectar.
