Salmon Nicoise with Garlic Polenta

Use smoked or leftover fresh salmon for this dish. Cook up the polenta. If taking for lunch on the go, package the dressing and separate from the salad and garlic polenta. If any ingredient is a bit too moist package it separately too.

Garlic scented olive oil sears day old polenta or simply use the convenient tubes of polenta.

Smoked Salmon Nicoise Salad

Any fish goes well with this salad, but Wild Smoked Salmon is so simple that this salad is just a tad easier with a lovely smoky flavor too. Substitute asparagus for the green beans if they are more readily available.
