Quickly seared on the grill, brings out the natural sweetness making this a slightly bitter, slightly caramelized treat.

Ingredients

  • 3 heads belgian endive
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1 pinch black pepper, to taste

Serving Size: 2 People

Preparation Instructions

Heat the grill to high heat.

Slice heads of endive down the middle into two long halves. Pour the olive oil in a small plate. Dip each side into the olive oil. Sprinkle generously with salt and pepper.

Sear the endive with the cut side down first for about 2-4 minutes until char marks appear. Flip over and sear another 2-4 minutes until it is just becoming golden and light markings appear.
