Teff with Italian Plums

from Teff & Italian Plums, the Week of September 28, 2014

If you are unfamiliar with teff, it is a staple grain in Ethiopia, and is the world’s smallest grain. It is often ground into flour and made into injera, the rolled, soft, delicious flatbread served at Ethiopian restaurants that functions as both plate and utensil for spooning up delicious stews. Whole teff is wonderful served as a cooked grain, and its deep, rich flavor is an excellent compliment to sweeter
breakfast foods. Pairing the teff with plums, seeds, and almond butter fills out the nutrition for this simple meal. Thank you Dr. Kaycie Rosen Grigel for contributing this delicious breakfast dish!

Ingredients

  • 1 cup teff
  • cups water, divided
  • ¼ teaspoon salt
  • ½ cup sunflower seeds
  • 12 plums, italian prune plums are ideal
  • 2 teaspoons honey, optional, to taste
  • ¼ cup almond butter

Serving Size: 4 People



 

Preparation Instructions

In a medium saucepan, add teff, 3 cups of water, and salt. Bring to a boil, reduce heat to medium low and cover. Let cook 15-20 minutes until teff is tender and water is absorbed. You may lift the lid and stir if it looks like it isn’t cooking evenly.

In a separate saucepan, place plums, the remaining 1/4 cup water, and honey over medium heat.

Cover, and cook about 5-7 minutes: shake occasionally so the plums don’t stick to the bottom—they are done when they are soft. While teff is cooking, dry toast the sunflower seeds in a small skillet until light brown and fragrant. When all the parts are
cooked, place teff in a bowl, mix in about 2-3 tsp of almond butter, and sprinkle the plums and seeds on top.
