Pumpkin-Molasses Parfaits

Almost gorgeous enough to be dessert, but rather is a decadent way to start your day.

1. Make the granola in advance.
2. Whip together the pumpkin, yogurt and spices.

Take it on the go: If you combine these, the granola will soften, which is kind of tasty in its on trifle-like way. However, if you like your granola to maintain its crunch, store these in separate containers and toss together just before enjoying.

Imagine a bowl full of broken up pumpkin-pie-spiced gingerbread that is a bit crunchy and not too sweet. Not only does it have a pumpkin-pie spice, but a little cooked pumpkin brings it altogether.

Hey pumpkin pie lovers! Yes, you. The one who feels that because a squash is a vegetable that makes Pumpkin Pie a reasonable breakfast food. First, I totally agree. Second, this parfait may be just a tad healthier and easier to put together. Any granola will do, but plan to make your own and use the Molasses-Pumpkin Granola for this instead. Feel free to substitute pumpkin pie spice for all of the spices.
