Chestnut & Clementine Salad with Sweet Potato Mash

Preheat the oven, prick the sweet potato all over and place in the oven to roast. Prepare the salad, except store the dressing separate from the ingredients. Peel and mash up the cooked sweet potato and store in a container that can be heated, if you want to warm it at lunch. Alternatively, place the hot mashed sweet potatoes in a thermos, It is also tasty cold.

Chestnut & Clementine Salad

What a lovely way to showcase both chestnuts and those sweet little cuties on a bed of spinach greens. Creamy yogurt dressing brings everything together. If you don’t have dates, use dried apricots or cranberries instead. Walnuts substitute nicely for the chestnuts if they are not available.

Sweet Potato Goodness

Whole sweet potatoes tossed in the oven until tender are just about the easiest base to a great meal. Once out of the oven, there are so many possibilities, eating the skin adds nutrients, while peeling it away leaves you with a sweet mash to be devoured. A bit of salt, butter or coconut oil will complete this dishes divine simplicity.
