Biscuits with Ham, Manchego & Marmalade

from Spanish Squash Biscuit Sandwiches, the Week of December 28, 2014.
View the next recipe for this meal.

Simple sandwiches start with freshly made biscuits, thick slices of ham and manchego with a creamy dijon spread and tangy marmalade.
The cheese & sour cream can be skipped for a dairy-free option, or skip the ham for a vegetarian option.

Ingredients

  • 2 tablespoons sour cream, or plain yogurt
  • 2 tablespoons dijon mustard
  • 4 biscuits
  • 2 tablespoons marmalade
  • 4 slices ham
  • 1 cup baby spinach
  • 8 slices manchego cheese, thin

Serving Size: 4 People

Preparation Instructions

Whisk together sour cream and dijon mustard. Split the biscuits in half. Dollop one half with the creamy mustard and spread the marmalade on the other half.

Fill the sandwiches with the ham, baby spinach and manchego cheese slices. Sandwich together and enjoy.
