If you have leftovers of this salad, serve it with this Apple Quesadilla for a quick lunch. The chard salad can be served cold or with the warm dressing newly drizzled on.

If leftovers are not handy, prepare the quesadilla first and allow it to linger in a warm pan while you finish up the salad.

Its simple, but surprisingly lovely. I won’t pretend this is complicated. Just use a fabulous apple and your favorite cheddar. Enjoy.

Warm Cocoa, Apple & Chard Salad

This salad is a bit adventurous. Be tempted to try it, if only to experience the silky texture of the cocoa throughout the winter greens. Apples, dried cherries & the Cocoa Vinaigrette are warmed and tossed onto creamy goat cheese, crunchy almonds and fresh chard. Substitute cranberries for the dried cherries and another dark leafy green for the swiss chard, if unavailable. Leave out the cheese for a dairy-free or vegan option.
