Start with the fennel scalloped potatoes. Once they are in the oven, begin to prepare the salad ingredients. Next, prepare the chicken- pound it out evenly and prepare all of the sauce ingredients. When the scalloped potatoes have only 15 minutes left of baking start to sear the chicken. When it is done, toss together the honey pine nut sauce.

Fennel Scalloped Potatoes

A simple scalloped potato dish is more inspired with a topping of buttery fennel bulb slices. Make this even more magical with a pinch of fennel powder or ground fennel seed. If you have fronds and stems on the fennel, just slice up whatever appears edible and sauté along. A little pinch of the fronds make a nice garnish, too.

In winter, seasonal citrus pairs nicely with creamy avocado and crunchy fennel in this simple salad. Use the most beautiful citrus you can find: oranges, grapefruit, blood oranges, or ruby reds. Make sure your avocado is ripe by gently pressing near the stem to avoid bruising.

Fennel Chicken with Honey Pine Nuts

Honey sweetened & buttery pine nuts are kissed with chunks of fresh fennel and drizzled over chicken. It is a simple dish that comes together quickly. We also call for the elusive fennel pollen. This can be found online through www.fennelpollenspice.com. Alternatively, use ground fennel seed, which is much easier to come by and considerably cheaper.
