Cacao Nib Beet Slaw

from Cocoa Vinaigrette with Two Salads, the Week of February 8, 2015.

Dazzling red beets, carrots and shocking bits of cocoa bitterness from the cacao nibs, which are bits and pieces of raw cacao pods all shine together in this unique salad. To complete the chocolate effect we couldn’t resist tossing it with this Cocoa Vinaigrette.

Ingredients

  • 2 carrots, peeled
  • 1 beet, peeled
  • 2 tablespoons cocoa vinaigrette, see recipe or substitute balsamic vinaigrette
  • ¼ cup cacao nibs

Serving Size: 2 People



 

Preparation Instructions

Peel and shred each carrot and beet.

Toss with the Cocoa Vinaigrette or a balsamic vinaigrette.

Fold in the cacao nibs. Serve immediately or within 4-5 days. The flavors will meld more with time.
