Black Bean Soup with Citrus Beet Salad

Start the soup and once it is simmering with the beans in it, start to prepare the ingredients for the Citrus-Beet Salad. Arrange the mexican toppings to add to the soup as desired. Once the soup is ready, toss the salad and place the toppings on the table for every guest to decorate their own soup.

Black Bean Soup

Pureed and smooth black bean soup works perfect vegan, but if you love bacon or ham this is a great place to highlight those flavors. Use an immersion stick or regular blender to puree.

Shredded beets, carrots, grapefruit and blood oranges create a colorful palate of crimson & amber splashed throughout the lettuce. If blood oranges are a challenge to find, simply use regular oranges.
