'Shamrock' Butter

Wood sorrel is often mistaken for the traditional Irish shamrock, so in this spirit whip up your own ‘shamrock’ butter with the bright, almost lemony sorrel instead. If you had visions of mint shamrock shakes when you read shamrock butter and want to try mint butter instead, I would welcome the idea, although I have yet to try it myself.

Ingredients

  • ¼ cup butter, unsalted, try killarny's irish butter to keep in the shamrock spirit
  • 1 cup sorrel, washed and dried
  • ¼ teaspoon salt, more to taste

Serving Size: 6 People



 

Preparation Instructions

Bring the butter up to room temperature, if possible. Place in a food processor with the sorrel and salt. Whip around until evenly blended. Serve room temperature or warmed.

Alternatively, roll into a log and wrap in plastic wrap. Freeze or place in the fridge to store. Slice off pieces to add to dishes that need a bit of bright sorrel butter flavor.
