Mascarpone Creamed Greens

This simple sauté of greens, becomes creamy goodness with a couple dollops of mascarpone cheese. If you can’t find the tasty Italian cream cheese in your speciality cheese section use cream cheese instead. The flavor will be different, but you will still have the lovely texture.

Ingredients

  • 1 teaspoon olive oil
  • 1 bunch greens, washed, dried and shredded thinly
  • 4 ounces mascarpone cheese, or cream cheese, add more if desired
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

In a large skillet over medium heat, drizzle in the olive oil.

Toss in the shreds of greens and sauté until wilted and soft.

Add in the mascarpone cheese and sauté until melted and combined.

Sprinkle with salt and pepper to taste.
