Grilled Mango Curry Chicken with Beet Raita and the Curried Garbanzo + Mango Salad

Blend up the mangos in the marinade and marinate the chicken. Meanwhile, cook up the beets and chop up all the veggies and other mango. Toss the bean & mango salad together. Grill the chicken and finish up the raita. Serve the chicken with the two creamy sides.

Slightly sweet, creamy glaze with a touch of spice (as much as you like). Want this dairy free? Substitute the thick top part of coconut milk, instead. If you can’t find mangoes use all yogurt instead.

Beet Raita

Raita is a cooling cucumber condiment found alongside spicy Indian dishes. Mixing in bites of roasted beets is a seasonal substitute when cucumbers are not quite ready. They add a sweet pink twist.

Curry Garbanzos & Mango Salad

Pantry items are tossed together with fresh greens and mango. If you do not have access to fresh mangoes, tear dried mangos up into pieces and plan to use about half of the amount. Make this vegan by using vegenaise. A sprinkle of crushed cashews will add a nice boost of protein and crunch.
