Asparagus, Goat Cheese + Greens Omelette

Oven roast the asparagus.* This can even be done in advance. Prepare the remaining ingredients for the omelette including wilting the greens and whisking up the egg. Once the asparagus is cooked through, quickly make the omelette and tuck in the asparagus just before folding it up to serve.

*Since this is for breakfast, using broth for the asparagus might be more ideal than white wine. Unless it is a fancy brunch. ;-)
