Chunky Cucumber & Tomato Salad

Simply toss these together when in season- if they are flavorful enough they will only need a splash of olive oil and vinegar to make it a complete side.

Ingredients

  • ½ red onion, chopped
  • 1 cucumber, peel if the skin is tough or bitter
  • 1 cup cherry tomato, or more, washed and dried
  • 1 bell pepper, stem removed and chopped
  • 2 teaspoons olive oil, extra virgin, or more if desired
  • 1 teaspoon red wine vinegar
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Soak the chopped red onion in a bowl of water while you chop the remaining veggies. This is an optional step which will help take out some of the sharp onion flavor and mellow them out a bit.

Toss the cucumbers, cherry tomatoes, & bell peppers together. Toss in the red onions, drizzle with the olive oil & vinegar and season with salt & pepper to taste.
