Cantaloupe Salsa

Juicy, even slightly over-ripe melons will work well with the spicy additions in this delightful little quick salsa. Control the spice level by starting with half of the jalapeno and adding more as desired.

Ingredients

  • 2 cups cantaloupe, diced
  • 2 tablespoons red onion, finely minced
  • 1 jalapeno, minced
  • 2 tablespoons cilantro, finely minced
  • 1 inch piece ginger, fresh, grated or finely minced
  • 1 lime, wash and dry

Serving Size: 2 People



 

Preparation Instructions

Toss together the diced cantaloupe, red onion, jalapeno, cilantro, and minced ginger.

Fold in the zest of lime if using and lime juice. Toss. Taste. Add a pinch of salt, if needed. Skip it if you are serving with really salty chips.
