Coconut Granola Stone Fruit Bake

Prepare the coconut granola in advance, a day or two or up to a week. When you are ready for a stone fruit bake, chop the fruit, assemble and bake. Serve with an optional dollop of the Whipped Coconut Cream.

No form of coconut is left untouched for this sassy granola. The only other addition are dates, but if you prefer trying out coconut sugar instead, by all means go for it!

You know how sometimes you forget about some otherwise beautiful fruit and it starts to look a bit sad and soft? I chop those fruits and bake ’em up. The natural sugars come out meaning no sugar is needed to make these tasty. Even the granola can be whipped up sans sugar, just try this Fresh Apple Granola recipe.

Whipped Coconut Cream

This au natural vegan, dairy-free topping is beautifully fluffed up and perfect for replacing whipped cream. Use your preferred sweetener such as honey, maple syrup, agave, stevia or even organic sugar, just adjust to taste. While this takes just a few minutes to whip up, allowing the coconut milk to chill overnight or for at least 20 minutes is a key step.
