Sweet Corn Dressing

A simple blend of fresh corn, olive oil and vinegar makes up this dressing. This almost sweet, yet tangy dressing is a touch creamy, but still vegan and dairy-free. For one cup of corn, you will only need one, maybe two ears of corn. Add extra flavors and spices, such as smoked paprika, chipotle, fresh cilantro, or basil.

Ingredients

  • 1 cup corn, fresh
  • ½ cup olive oil
  • 2 tablespoons white wine vinegar, champagne or rice wine vinegar work as well
  • ¼ teaspoon salt
  • 1 pinch black pepper, to taste

Serving Size: 4 People



 

Preparation Instructions

If starting with fresh corn on the cob, blanch in boiling water for 5-10 minutes. Remove and cool in ice cold water.

Stand the ear of corn upright on a cutting board and cut alongside the ear to remove the kernels.

Place the kernels, olive oil, vinegar, salt and pepper in the blender. Whirl around until smooth.

Add more additions at this point to taste.
